Beautiful Beet Recipes
These roots may look rough on the outside, but once cooked and peeled, they'll win you over with their velvety texture, vivid color, and subtle sweetness. Buy firm, small to medium beets (with tops, if possible, as you'll get the most cancer-fighting antioxidants from the whole beet). Trim each one, leaving about 1" of the stem, and chill up to 2 weeks. The nutrient-rich greens wilt fast, so prepare them within a day or two. Don't peel beets before cooking, and because any break in the skin will allow the color to bleed, wait until they're cool enough to handle (wear rubber gloves to prevent staining). Now, prepare to enjoy beets like you've never had them with these 5 healthy (gorgeous!) recipes.
